Chomping Pea Shoots

  1. Oh, they look so delicious! I thought of you today when I watched the Martha Stewart Show. She had a chef who was demonstrating spring foods like green pea shoots, ramp, and morels. He made a very yummy looking green sauce. I think I can remember it:

    In a VitaMix blend together green pea shoots, some good quality vegetable stock, a very small pinch of xanthan gum (made from cabbage) and a touch of salt. Blend until creamy and smooth. Serve raw.

    He used it as a base for "crab" but I think it would be delicious served as a base for grilled tofu slices, or mounds of brown rice, or veggie meatballs. I am now inspired to get green pea shoots growing!

  2. PS: The xanthan gum is something he uses in all his sauces because it makes it smoother and creamier than without.
